Not a great picture, but damn. Fried softshell crab stuffed with crab cake, topped with crawfish cognac sauce served over smoked gouda polenta (fancy cheese grits ).I got the idea from a local restaurant that posted the same dish. I'd been there before and while the food was great, the service was shit. Much rather cook it myself. I'll definitely do it again some time. The cognac sauce was amazing. Had a side of bruschetta. Tried a new thing today instead of blanching the tomatoes to peel them I hit them with the MAPP torch and tossed back in icewater after torching them and they peeled like a charm. Pan seared beef terres major with mushrooms in a Madeira shallot sauce. Mashed potatoes with butter and heavy cream. Fresh baby greens salad with a homemade shallot vinaigrette, the croutons were home made as well. Snowflake dinner rolls with butter to mop up the rest of my sauce on the plate. |

Decided to try a bottom round roast on the KJ since beef prices are getting so high. 2.5 lb for about $23.00 Indirect at 225* for around 1 hour. Wrapped at 110* and rested 10 min . Full afterburner on all sides for 30 sec each till internal was 130* Still came out like shoe leather. Do not recommend ![]() Beware of the “working” cuts for grilling

| 40 pounds of chicken 14 racks of st Louis ribs, 40 ears of corn. Ma is cooking rolls, making pasta salad and a shit load of peach cobbler. Feeding about 35 folks three squares a day till sunday. |

Wife and I cooked up a storm today. Lunch was sausage in a gravy, roasted Yukon gold potatoes, and smothered green beans. Supper is grilled chicken thighs, grilled boudin, roasted broccoli, and Chef John’s sausage, beans, and greens. All of it came out great and we’ll have food all week. I need to take more pictures. |
