I work in an office with 20-35ish people and we are having a potluck next week and I cant figure out what to do. I want something quick and easy ( meaning it would take an hour to make and not use a bunch of complicated ingredients) but not something thats stupid easy or common (IE mac and cheese, a cheese plate, etc).
Has to be healthy-ish
I have an oven and cast iron skillets ill be using, no fryer.
Any ideas?

Look up  Parmesian Tilapia recipe. Very easy. You can use a similar recipe for boneless chicken breasts, too! I brought it to a church potluck and it got rave reviews!

Or experiment for a week or so with a side of mushrooms. There are a lot of neat things you can do with mushrooms. Some people just don't like 'em but those who do will become your best friend!

For a simple, sweet dessert, dip a strawberry in some sour cream, then dip it in brown sugar.

Awesome, I will try that Tilapia recipe out in the next few days and see how it goes. I have a bag full of it. I was thinking of doing stuffed mushrooms because there is at least one vegetarian here so I wanted to do something they could eat too.

Make sure they like mushrooms! There was one vegetarian I made mushrooms for; she said, "Funguses. Yuck!"

Well oddly enough you were correct, she doesn't like/eat mushrooms, so I didn't fix any. But the tilapia was a hit! I added a few frozen salmon fillets in with it and it was just as good. Hell even the parmesan mix put on top of a turkey sandwich was awesome too!

For when you have your next potluck, if you have a crock pot something I always do is collard greens.  All it takes is 2 lbs. of the collard greens (washed and cut up, big stems removed), a cup and a half of water, half a cup of cider vinegar, a tablespoon of Better Than Bouillon ham bouillon or 2-3 smoked ham hocks, about a spoonful of Sriracha, and a spoonful or two of coarse sea salt.  Slow cook that for 10-12 hours (i.e. the night or morning before you need it) and you've got an awesome flavorful veggie for occasions where most people forget to bring one.
