I made some chicken that I call Fishy Buffalo Breasts.  Consists of the following:

Half package of goldfish extra crackers (crushed)
Tablespoon Cayenne pepper
1/4 cup kraft parmesan Cheese
1 tablespoon of salt
1 tablespoon of black pepper.
3 chicken breasts
Flour
3 beaten eggs

1 stick butter
Franks RedHot with butter to taste (a basic buffalo sauce)

Dredge chicken in flour

Pull through eggs (not sure of correct term)

Cover with goldfish and dry spices

Pan fry win 3/4 inch of peanut oil at 350 in fry pan for 8 minutes at 350.

Cover with red hot/butter sauce

Yum


Question is, is it safe to immediately fry eggs that the chicken was dunked in prior to battering with goldfish batter?  like, scrambled hard and eat? Hot sauce was added to eggs prior to dunking.

I refrigerate coated breasts for an hour or two prior to frying to insure batter sticking.  Thought the scrambled eggs might be a good appetizer prior to eating chicken.

I would say that they'd be safe as long as you temp them and they hit 160 degrees.

Might be safe - but why? I would imagine the texture would be horrible with the flour and hard frying
