| How long do these need to cook at med to med high heat? They are 1/2 inch thick and about 1 1/2 in chunks. The skillet is cast iron if that matters. |

Old joke with a lot of truth to it.
Until they are done! Lots of variables, size of pan, type of burner, how high is the heat, cover or not, amount of potatoes. Keep poking them with a fork,at some point they will start getting soft, then it is just a matter of how crispy you want them |
| My favorite way to pan fry potatoes, is to first make a batch of boiled potatoes, skin on, uncut. Let them completely cool in the fridge. Make some potato salad out of some, then peel a few, chop them, and fry them with a hot skillet. These turn out much nicer than starting uncooked, in my experience. |
