How long do these need to cook at med to med high heat? They are 1/2 inch thick and about 1 1/2 in chunks. The skillet is cast iron if that matters.

I take it you are frying them in a little oil?  You're probably talking 15-20 minutes.  Make sure you keep an eye on the heat so the oil doesn't burn and taste bitter, and fork test the potatoes often.

Old joke with a lot of truth to it.

Until they are done!

Lots of variables,size of pan,type of burner,how  high is the heat,cover or not,amount of potatoes.

Keep poking them with a fork,at some point they will start getting soft,then it is just a matter of how crispy you want them

My favorite way to pan fry potatoes, is to first make a batch of boiled potatoes, skin on, uncut.  Let them completely cool in the fridge.  Make some potato salad out of some, then peel a few, chop them, and fry them with a hot skillet.  These turn out much nicer than starting uncooked, in my experience.

I would say 15-20 minutes covered. I usually cook them a little longer with the lid off because I like them crispy.
