My wife and I recently adopted a hound mix from our local SPCA. He is around 1.5-2 years old. We were told that he was supposedly houss trained/crate trained before we got him but they said he might have some accidents. So far, since we got him Sunday, he has peed in the house everyday at least once and has eaten one BP&j that I had made off the countertop.

Currently he keeps peeing when we take him out of his crate while trying to get him outside. We don't pop him, just tell him bad dog for the being cause don't want him to be scared.

Any tips/advice would be greatly appreciated. I'll post a picture of the culprit in the morning

Let him out more and keep his crate closer to the door. Get him ready to go outside before opening the crate and be at the door ready open it. Praise him when he pees/poos outside.

Agree.
It'll take a little time but he'll get the idea and settle into a routine sooner or later.  It's a learning curve for him, so just be patient.  There's no need to scold him when he pee's in the house... by the time it's done, he's already forgotten about it.  Like was said already... praise him like crazy when he does the right thing at the right time.  My best advice is always have treats\rewards close by or in your pocket and you'll be amazed how quickly they learn and adapt.

He's getting better each day. We at least make it outside before he pees on our patio, but that's outside and I just have to pour bleach water on that, no intensive clean up involved.

He can sit, shake, and lay down. Considering at the shelter he only knew sit (barely) we are making progress. Wife took him to the dog park today with her sister, he loved it though 2 dogs tried to jump him which he didn't enjoy.

Good job! Old dogs can and do learn. I got a 7 year old Akita ex-show dog that only knew a single command: "stand". She's got all the basics down now. Remember that this is just the beginning. Be consistent and remember that every minute of every day is an opportunity for training. No need to set time aside for it, even just walking through a doorway with your dog is an opportunity (you go first). In a year you will be amazed at what you have accomplished.

However it is recommended that you nix the dog parks. They can be a bad scene. If you absolutely feel like your dog needs to play with other dogs, seek out the owners of the "good" dogs and set up play dates. Bad experiences at dog parks can lead to aggression in your dog. Just say no to dog parks!

Give it time, I was going through rolls of paper towels and a ton of cleaner for a few weeks with my GSD when it was a pup.

LOL!
There wasn't enough paper towel at the grocery store when we got our two GSD's!  Now that it's Spring and everything is wet and getting muddy, the kitchen is lined with huge beach towels.

Socialization is a huge thing for a well-behaved dog.  But there's right ways and wrong ways.  Each dog is different.  Patience and consistency are a dog and it's owners best friends.

And lots of treats at the right times!
