I want to start listening to some classical and/or symphonies and would like some input on where to start.
 
   I enjoy piano and wind instruments the most if that helps with recommendations.

Mozart then. Beethoven has brass, but I like him more. His piano music is some of the best ever written. They are the tradtional starting points for this sort of music.

+1 to Combat_Jack's post for what you're looking for.

I'm more of a strings guy, so Bach is my favorite. But I also love Bizet and Vivaldi.

Bach is technically Baroque, not Classical.

It's ok. I like a lot of Romantic stuff. Early romantic late classical.

I most likely miscategorized the genre because I have no idea of what I'm talking about. This is aparently Bach and exactly what I was looking for.

Start with Mozart's Requiem & go from there.

If you're into metal players like Yngwie Malmsteen or Randy Rhoads, try some Paganini.

Handel was a pretty nice composer.

Chopin whooped ass on the piano.
