I am installing ceiling speakers in two rooms for general music playing.
Do I need to build boxes for these or just leave them open to the attic?

Any decent speaker designed for in-wall or in-ceiling use will have its own enclosure as part of the speaker.  It will also have a decent mounting flange.

Cut a hole & mount.

I recommend Monoprice for good sounding speakers at a decent price.

I agree. Mine went in with zero issues and sound good for what I use them for.

The back of the speaker is usually open. Just cut a hole into the dry wall, pop the speaker in, and tighten the screws. In wall/in ceiling speakers don't typically have a full chassis enclosure like you would find with speakers designed to hang off a wall or sit on a shelf. Polk audio has some very good options.
