I recently bought a used 1982 K20 and drove it home (about 5 hours) with no issues. It had a leak from the oil pan gasket which I replaced yesterday. The PO was running Rotella 15W40 in it before and so that's what I put back in. Before the change the pressure was reading about 50-55 PSI which I though was kind of high but alright, and after the change the needle pegged and stayed there. Any ideas on what caused this? I'm thinking maybe if I went to a 10W30 or even 5W20 it might read different but I'm not sure. I've never had or seen an issue like this.

Sounds like the new oil filter has a stuck relief valve.

While cold oil will peg some pressure gauges on start-up, you really can't take the risk that a faulty oil filter might be starving the engine of oil.

I went and got some 10W30 and a new filter just now. I'm going to change it out tonight and see what happens.

Has the oil pump ever been replaced with a high pressure pump?
My 85 when it is cold is pegged, and idles at 50 when hot, 65 when at RPM.
Unless the oil adaptor has been replaced or modified, it has a bypass valve built into it. It won't be starving for oil even if the filter is plugged. Pull the filter and make sure this bypass is there and operational. Sometimes guys will plug it.






ETA: If it were starving for oil you also would have lifter noise. I can't remember off the top of my head if that sending unit is before or after the filter. I am thinking after, fed off the cam passageway.

Check the oil pressure sending unit and wires.

The only way to really monitor  the oil pressure on that era of Chevy is to install a mechanical guage.  
After this many years, the gauges are suspect.
I have replaced multiple sending units and gauges in my '87 to get even a remotely correct reading.
