I have the computer of a former employee that I am going to be asked to turn over to a law enforcement agency as part of an investigation.  I have copied the contents of this machine to a separate hard drive, because I will also need its contents for a civil matter.  How to I go about "restoring" the data from Outlook so that it can be used on a new machine?  What kinds of files does outlook use, and how do I open them on another computer?

just search for *.pst (including hidden files and folders)   and copy it to a usb thumb drive

if there are some labeled archive.pst copy those as well

Before you do that, how do you get your email?

What kind of server?  Exchange?  Pop?

In outlook, does it say "Mailbox - <User>" or "Personal Folders"?

As stated, anything .pst will be an Outlook personal folder.

Also as stated, that may or may not help very much depending on the type of mail store used.  If mail was always stored in Personal Folders (Cached Exchange Mode) you are in luck.  If the Mail was kept on the server, you won't find very much. Unless this person made personal folders and copied things into them.  But I assume if you are in this organization, a server mailbox store would still be attainable.

You can Google up some free or shareware PST viewers.  Or pay products with a free trial. Use the free trial to open the PSTs and hopefully you can copy/paste into word documents, or even take screenshots.
