Right now when I click on an image file (such as .bmp) the default viewer is ACDSee.  

I don't want that, and would like to be able to select what program to open.

I'm sure the answer is fairly simple, but I'll be damned if I can find it.

Another way is to right click on the image, select "Open With" then select "choose default program"
