Any recommendations on a good encryption program? I'm thinking of using True Crypt. I'm looking to encrypt legal documents/bank records, etc. Thoughts, suggestions?  Maybe a self encrypting drive?  Thoughts on hidden partitions?

TrueCrypt is the best there is IMO.  Simple, easy,   powerful, and free. The best part is that it's open source so you know there aren't any backdoors hidden in there.

Truecrypt doesn't encrypt individual files. It creates a container (called a volume)  of whatever size you specify  that you can then mount as a virtual drive  and put files inside. If you only want to encrypt one file, then it's a little tedious. But if you have a whole folder full of financial stuff, it's easier to create a Truecrypt volume and put all the files in there, rather than individually encrypting each file.
