all the suck that is apple and itunes aside, it's what I got...

just updated to iOS5

everything is fucked up now.

the memory status bar at the bottom of itues shows that I'm 1.6 gb  OVER the amount of space on my phone (3Gs, 16gb)

how the hell did I go from having space, updating to ios5 and now OVER?

how do I remove all the photos from my phone?
where did my documents/books go?
the memory status bar shows I have 6gb of "other", WTH is "other"?

Guessing that you did a back of the phone before upgrading (right clicking the I phone icon in I tunes on the left menu and selecting back up before you upgraded), then all you have to do is a fresh OS install on the I phone to take it back to stripped factory conditions in I tunes, then do a restore of the phone after that via the right click method from the back up save to load everything that was on the phone before the OS 5 upgrade back on the phone.

If you did not do a back up before upgrading, may god have mercy on your soul!!!

upgrading ti iOS5 hosed my phone two + weeks ago and Apple tells me they've done all they can do. I knowI complicate the issue by syncing contacts, notes and calender at work and apps and music at home but they have forced me to change my apple ID and keep telling me my email address is already used. I want to know who the fuck stole my email address! The ASSURE me my account has not been hacked but something fishy is going on!

Mine was trying to sync ALL of my movies, over 45GB, it had selected all by default, I was just loading a couple GB at a time before.

So I turned off the ALL and viola, we are happy again.....

Did you let the update complete? Is it still updating? If so, let it complete.
If not, just double check your settings, uncheck the videos or whatever is sending you over the limit and re-sync.

My 32GB iPhone took 2 hours or so.  For a while it too was showing more in use than 32GB.  Once it finished completely restoring the iphone, everything went back to normal.
I have a feeling that a lot of problems are caused by unplugging the iphone before it's really all done.  The iOS 4 updates were all pretty fast and when the little bar on the phone was gone, you were pretty much good to go.  The iOS 5 update is a complete backup, wipe iPhone, restore iPhone, apps, music, videos, photos.  It takes a long time if you have a full iphone.
