Over the last month+ I have made major diet improvements that I intend to implement permanently.
That said, I am growing tired of spending so much time in the kitchen on a daily basis. Any tips or ideas on how to cook and prepair meals for multiple days at once? How long do pre chopped vegetables stay good for? Cooked meat is good for three of four days right? |

Cooked meat is good for three of four days right? - as a general rule I say on more than 4 days after cooking Try cooking several lbs of meat at once, either on the grill or in the oven. Season several of them differently so you don't have to eat the "same" thing for days. Crockpots are also a great idea for mass cooking. For vegetables, I make large batches of broccoli and brussel sprouts in the oven and that gives me 2-3 servings. Also making a huge salad will give you a couple meals off of it as well. It sucks sometimes, but its worth it in the end to be healthier. You've made the first steps, keep it up

Hmmmm. Crockpot meals and freezing portions might be a good idea. It's amazing how good I feel after just eating healthy and exercising almost daily for less than two months. I wish I had made this decision ten years ago. |
| Last week I pan roasted a whole package of chicken thighs in the oven with some potatoes, and ate on that all week. Just added some veggies every day, I love those steamer bags you just throw in the microwave for a few minutes. I also make a dozen hard cooked eggs at a time and go ahead and peel them, so they're quick and easy to grab for a snack or to put in the lunch box or on salad. |

Prechopped veggies (uncooked) should last a while...if they're cooked, it'll be less. I don't care for most reheated veggies and usually make fresh. I keep meat for 7 days after cooking...maybe that's pushing the limit, but it's never bit me. Just refrigerate of course. Invest in a good set of tupperware containers to organize everything. |

I usually do 7 days on meat too. I tend to grill up like 4-5lbs of chicken thighs and make 2lbs of ground beef every Sunday, which I put on salads during the week (I just buy the pre-made salad mix) I've found that stuff like sauteed brocolli and carrots do fine for nearly a week when reheated. Softer stuff like roasted squash and zucchini not so much, maybe 4 days? Same with roasted brussels sprouts. I find that sauteed asparagus lasts longer than grilled. |

Do you have a rice cooker?
You can assemble meals and freeze them, and plop the whole mess into a rice cooker and hit the button. 20 minutes later it shuts off and your food is cooked and ready to eat. Basically store the rice or noodles seperate from the meat and veggies, toss everything in with your water or broth. I eat lunch daily out of one, it's efficient. |

I have a steamer, I cook several days worth of brown rice at once.
I have bags of frozen vegetables in the freezer; I steam those as well, at least a few meals worth. I cook up a couple pounds of chicken breast at a time on my Griddler. Sweet potatoes are done in 7 minutes in the microwave. So I always have a decent meal to quickly throw together in the fridge. I like salmon and stuff like that too, but it thaws in lukewarm water in no time. Spray with olive oil, sprinkle with Old Bay, wrap in aluminum foil and it's done after about 5 minutes in the Griddler. |
