The local taxidermist in the town we hunt pheasants in South Dakota hires high school kids to clean birds for $3/ea during season. It is quite a sight to see them all peeling pheasants. I never had anyone clean my game for me before, but for the $3 they clean, wrap, deep freeze and hold the birds in a freezer until you are ready to pick them up. Works out great.

I usually stand on the wings and pull up on the legs which leaves me with a breast with wings attached, then I just rip the wings off.

Takes me like 30 seconds or less.

Same thing with Grouse. However I do cut the head off first and this technique can be impossible if you blast a wing hard or break the legs.
