I am new to Dove hunting.  I was able to harvest a collared dove today.  Some of the guys I was with think I should get it mounted.  Is it really that rare to get this type of Dove?

You talking about a ringneck dove?  If so real common, at least around here.  No limit on ringnecks either.

Ringneck:

If its a banded dove, I don't know.  Supposed to report where its killed, etc.

'Most' taxidermists won't touch doves.  You can read a paper through their skin, they are nearly impossible to sew or work with, and lose feathers if you look at it the wrong way.  

I've heard of taxidermists who tell guys who want "a dove" mounted to bring them six.

Your 'collared dove' dove is not that unusual.  Eat it.

May be rare in MO but the Eurasian Collared Dove is everywhere in FL.
