I have the Baofeng UVB5 and after trying to progrm the cahnnels I realise none of the GMRS frequencies want to program correctly. The FRS-GMRS channels worked just fine. Is there an off-set or something that could be causing this issue?

I just happen to have mine at my desk here at work.  Menu option 1, Step.  You can set it to 2.5, 5, 6.25, 10, 12.5, 25.  The 12.5K step should be good for FRS/GRMS freqs, and will work for GMRS freqs too.  462.550 is "channel 8" or "channel 15", first GMRS only freq, and that will work with even a 25k step.

Why not save yourself the trouble, download Chirp (chirp.danplanet.com) and grab a kenwood/puxing/baofeng/weierwei/wouxun/tyt/anythingwithakenwoodjack programming cable for $10, and do it via the computer?  Chirp even has all the FRS/GMRS/MURS freqs as a "standard" set of frequencies, so you don't even have to type them in.

I just realized it's a B5, not a 5R.  Should be similar tho.

Yeah you have it set on an incorrect channel step.
