Gang,

Friend of mine is going to kill a bull bison and have meat available on Labor Day.  I told him I was in for 50lbs.  This will be the first time I am having wild game meat processed.  I am thinking jerky, ground beef (for meatloaf and burgers), and maybe sausage.  I've been told the processor will (at my request) add various amounts of pork fat, as bison is super lean.  

Questions.  I'm over "processed" meats at the grocery store and all the crap that's in it.  I am getting meat from my bud because its legit grass-fed, wild meat, not steroid and hormone fed.  If the processor adds some fat, is that fine?  I know this will be many orders of magnitude healthier than what I get at the store, but what else will the processor put in the meat?

I'm going to call the processor tomorrow, but is having 50lbs of meat rolled into jerky/burgers/etc something I can expect to be super expensive?  Like I said, never done this before.  

Thanks for any advice on what questions to ask or how to request the meat be prepared.

We add pork fat to our moose and bou burger/sausage.

A little bit more than beef burger has as they are dry compared to beef.

With that small of an order you will not get much if you want a lot of jerky. Think 75% weight loss and probably 15 lb minimum to start.

^^ I've been told 50% weight loss on jerky, but either way the info is legit. If someone else is having jerky made you may be able to piggy back off of their order and not have to worry about a minimum. Adding pork to burger and sausage will offset some of the total weight loss. The sausage will probably double (50/50  - pork / thunder beast).
