Hi All,
I have been saving fat drippings in Mason jars for a while now, bacon chicken, etc. I opened one this morning and there was a pop with a release of pressure. So I emptied and washed the rest of them just to be safe. I really don't know much about storing food.

I ask because my grandfather always kept a coffee can of bacon drippings and whatnot next to the stove for cooking.

Can fat store indefinitely? Is it better not to be sealed?  I believe my sample was a year old...

Fat goes rancid. 

The reason for a can of fat drippings beside the stove is that if you pour the liquid fat down the drain, you will quickly clog your pipes with solid fat. 

Can you do stuff with fat? Yes, but most folks don't.

Thanks for that. I used it to fry eggs and stuff. I mainly use butter, Olive/ coconut oil. Just seemed like All that fat going to waste could be used for something.

I use bacon fat and bacon fat only. I generally won't mix fats at all especially not chicken. My bacon fat gets poured through a coffee filter into a can. Then rendered down in boiling water to remove anything else. This gives you a good usable fat with a decent smoke point. If you don't use it often keep it in the fridge.

I keep bacon fat to grease my skillet. It goes in the fridge when Im not using it

I save as much bacon grease as I can. Great for cooking or keeping cast iron healthy.

I keep bacon grease to fry stuff, but pie crusts are where it really shines. Not as good as bear grease, but still really good. 

Grease needs to be filtered really well to extend it's shelf life. All the stuff that's in unfiltered grease is what expedites it's spoiling.

All used fat gets consumed.
You can make tallow and it can be stored and I hear stories of for a very long time by old timers but don't know for sure.
