Hi All,
I have been saving fat drippings in Mason jars for a while now, bacon chicken, etc. I opened one this morning and there was a pop with a release of pressure. So I emptied and washed the rest of them just to be safe. I really don't know much about storing food. I ask because my grandfather always kept a coffee can of bacon drippings and whatnot next to the stove for cooking. Can fat store indefinitely? Is it better not to be sealed? I believe my sample was a year old... Thanks |
| I use bacon fat and bacon fat only. I generally won't mix fats at all especially not chicken. My bacon fat gets poured through a coffee filter into a can. Then rendered down in boiling water to remove anything else. This gives you a good usable fat with a decent smoke point. If you don't use it often keep it in the fridge. |

Grease needs to be filtered really well to extend it's shelf life. All the stuff that's in unfiltered grease is what expedites it's spoiling. |
