I think you will be good on the brisket. Are the beans fresh and untrimmed? Also, are you using "hotel pans" for your pudding. I can't remember the measurements for them off of the top of my head, but when serving something like a baked pasta out of them I usually figure about 20 servings per pan when served from a buffet. Thats not really comparing apples to apples, but you get the idea. If you are serving and it isn't buffet style then you will be able to stretch it a bit farther.
When cooking for a large group of paying people I tend to make sure I make a little more, especially the cheaper stuff, to assure that I don't run out. Better to have a little to much than a little to little. I run a kitchen at a retreat center/camp that is currently feeding an average of 200 people 3 meals a day from a buffet.
