I have a couple of cayenne pepper plants.  I have never raised them before, and my question is about harvesting them.  Do you pick them when they are nice and red, then hang to dry, or do you let them dry on the vine?  Thanks....

Snip the stems when they are fully red.
Use a needle and thread to string them into a ristra.
Otherwise, sun dry them or use a dehydrator.

They are very thin walled and dry easily.

in a hot dry climate....pick when red and string hang and dry.

in not so dry climate....pick when red and use dehydrater.....cookie sheet and hot car....gas oven with pilot light on....etc

otherwise  they may mildew....and that wouldn't be good eats....

Thanks for the info.  I thought you needed to pick them when they get red, because my two plants are loaded to the point they are breaking branches under the weight.  I will start the harvest tomorrow then and probably put them on the dash of a truck that we aren't using right now.

Harvest now (if they are deep red) and your plant will probably start flowering again.
Any that are green or changing leave them on to ripen.
You'll be swimming in peppers.

Are you just wanting the peppers dried?

I pick them and eat them green just fine.
Or I just leave them in the kitchen (or hung) and most will turn red on their own.

I went out tonight and picked 28 peppers off the two plants.  There are ALOT more peppers coming on, so I will be overrun with them soon.  I strung them together tonight, and have them hanging from the visor in a truck that isn't being used.  

I had initially planted about 12 hills of peppers from seed, but they never made it.  I got two potted plants and they have done well.  I don't know what I would have done with 12 hills worth if they had taken off.  Two will do it easily when they are loaded like these are.

I'm still waiting on mine to turn red. On the bright side of it though, the peppers on the plants are HUGE!

I inspected my Thai peppers today.
A lone ripe red fruit and two clusters starting to turn.
