I've been reading the threads about growing potatoes and decided to give it a shot.  I went out and bought some seed potatoes this evening along with all the lumber.  The sprouts on my seed potatoes are about eight inches long.  

Do I leave them and plant them as is, or do I cut them off before I plant and let them grow out again?  

If I let the sprouts on, do I cover the entire sprout with dirt, or let some sticking out of the ground?

 You're really waaaay too late to be planting spuds. You should have had them in the ground late March or early April.

I'm no expert on fall plantings, but you might want to research that.

From everything I've read, you can plant late varieties well into June.  Besides, now that I've got all the supplies, I might as well give it a shot and see what grows.

I'm a lot later than I'd like to be, but circumstances didn't allow for an early planting.  I'll get a jump on it next year.

I'd cut the potatoes into pieces about the size of golf balls, leaving one or two sprouts on each piece.  Plant the pieces 4-6 inches deep with the sprouts pointed up.  If the sprouts stick out of the ground, I wouldn't worry about it.  They should burst into leaves only a few days after poking through the surface.
