I have been experimenting with making my own bread for the last 18 months.

I started with the Zojirushi BBCC-X20 Home Bakery Supreme Bread Machine Maker.
IMO this makes fairly decent bread for a bread making machine. I was attracted to the
machine for several reasons. First, in a true SHTF scenario I could power the bread maker
with my generator where as the oven requires too much electricity. Plus the machine
offered a quick easy solution and introduction to bread making.

This last Christmas my wife gave me a book "Healthy Bread in Five Minutes a Day".
Due to my schedule I didn't get around to reading it until about two weeks ago.
This is a great book with some really interesting recipes. I started out with the basic recipe last week.
The basis for their system is to make bread in large batches, store the dough in the 'Fridge until you are
ready to bake a loaf.

A typical batch with make 4 or 5 one pound loaves. Since it is just me and my wife a one pound loaf is great.
If you have kids, make a two pound loaf. With this system there is no kneading and letting the dough rise.
Make a batch (we have a Kitchen Aid), place in a large bowl (or similar container) let it rise for two hours
and place it in the 'Fridge.

Bread Dough will store in the 'Fridge for up to two weeks. After several days the dough will acquire a
sourdough flavor...

I just got that machine,too. I'm quite pleased with it. I was tired of trying to find bread without HFCS in it, and finally said "Why don't I make it myself?".
