Hi guys,

I need to put a substantial amount of butter away for my SHTF stash, but money isn't flowing like it used to so canned butter is a hard purchase to justify anymore. I did a little research online for canning butter and most of the sites had very similar directions and the butter that was canned was the greatest thing since sliced bread. Well, I came across a few sites that also warned against canning butter due to the risk of Salmonella poisoning... that put me off for a few months but I did go ahead and buy the jars at the time.

Well, today I thought to myself: "People can foods all the time safely, and it's not uncommon to hear about Salmonella poisoning from other foods people can, so butter can't be that much greater of a risk...." and I bought all the butter I need. Now I just need a few words of encouragement and signs to look for that my butter went badly.

I've never tried it as we just freeze butter. But, I think I'd make ghee out of it I was looking at no electricity long term. <shrug>

Why not just buy Red Feather brand canned butter?  Tastes great, indefinite shelf life, easy to get from www.mrefoods.com.

Tell Steve I sent ya, and pick up some canned bacon while you're there!

Here's another vote for freezing.

There's no "officially safe" way to can butter and that's important to me. YMMV.

...apparently you can put up butter in a pressure canner, we recently got Jackie Clay's book on growing and canning your own food..its an awesome book, with that said she does have a reciept for doing this.however what you are really ending up with after following her is Clarified canned butter...Ghee for those who prepare Indian style food....I have a case of Red feather I got a couple years back.its terrific, but if you can your own it wont be like that...just a heads up...but it can be done successfully.....

The reason I am not hip to getting the canned butter is that I was laid off for the summer while building  a "root cellar". That put a significant dent in my savings, but I now have a place I can store preps on my BOL. Concrete and masonry construction was a lot more expensive than I thought it would be even with the help of friends negating labor costs.. As a result, I am having to be more discrete on how I spend my remaining funds on preps given a change in income etc. I would like to have some of the canned butter as a backup should this not go well, but $100 is a lot of money right now.

I have bought a few jars of Ghee, but damn.... that's definitely and acquired taste.

add the phrase [/url] after the link and [url] before include the brackets. As for canning... if Balls said it is not safe, then why risk it. But I do own a few cases of red feather... I picked mine up from MREdepot and Walmart (great to live in Utah). Walmart is cheap, MREdepot is cheaper on specials. Steve used to kick out awesome specials. Like buy 2 for 150 shipped. like he had last year or 2 ago.. Bought my last 2 cases then. I use it camping, at home when I run out of landolakes unsalted, I gave it away to friends and family in preparedness stockings last year, along with MREs/ MH packets, canned cheese, MP1 tablets, books, and info etc.. I even took a can into work to go with the cornbread and sourdough I made at the last pot luck... got some weird looks but they all agreed its great stuff.
