Anybody ever grow it? I have some in my garden, but haven't a clue when I should be harvesting it, or how to. Can somebody with some experience with this stuff help a clueless grower out?

How do I preserve it till my other salsa ingredients are producing?

1rst picture is what I have. Not all of the seeds that I planted came up. Must have been too deep or something.

2nd is a picture of the average size. If I cut some off will it regrow, or is it done? I don't know.

3rd, the dog thought he had to cheese it up for the camera, so I included him too.

It goes to seed very quickly.  If you want a continuing supply, plant it in 1-2 week stages.  Or, plant it later in the season.  It will also re-seed itself once it goes to seed and dies off.

Make sure to harvest it quickly, because once it matures a bit, the flavor is all screwed up.

I keep a small area of the garden where I let the Cilantro grow on its own, it reseeds itself reliably and I treat it like leaf lettuce and keep it picked to keep it growing and extend the useful harvest time. As far as storage goes I am clueless, I love the stuff and don't know of any way to store it without ruining it.

You can dry it like any other herb, but to be honest, it's not going to taste right. Others in this thread have it right: Plant it in stages, or give it room to go to seed and re-grow. The plants bolt to seed within a couple months.

As an aside, cilantro seeds are also the spice commonly called coriander, if you have any use for it.

Damn bunnies ate my one plant!  Its growing back though, so I might have Cilantro at the right time for my tomatoes to come in!

We time our's to match salsa canning time. Generally we'll start the seeds about 6 weeks before the maters and peppers start getting to the volume that we can use to can.
