Alrighty,
So I was at Costco today and bought some sirloin flap steaks.  They looked very marbled so I figured they're good.   Any recipe suggestions?  I looked online and found out it's one of those tough but very flavorful cuts.  I was thinking something like fajitas or beef stroganoff.  Ideas?

flap meat is very fatty and full of silver skin and tastes wonderful

it is good for fajitas and was commonly used in most mexican restaurants as it was cheap and flavorful, not so cheap anymore
in most groceries it usually went in the meat grinder for hamburger, it makes very good hamburger but with the silver skin it is tough to grind
it can be grilled and sliced on the bias like flank steak and topped with bourdalaise or mushroom gravy etc..

but must be sliced like flank, across the grain, on the bias and thin..

I marinated it and made fajitas with it tonight.  HOLY MOLEY it was good.  It's definitely a "buy again" cut of meat.  As my wife put it, it's what you've always wanted flank steak to be.
