4 Chicken Breasts
Fresh Basil
Sun dried tomatoes
Goat Cheese

Slice a pocket in the chix breast.
Line the pocket with fresh basil leaves
Fill with sundried tomatoes and slices of goat cheese
Toothpick pocket shut with some oiled toothpics
S&P to taste

Coat and marinate in a little olive oil and lemon juice while waiting for the grill to get hot.

Grill and enjoy!

I did this once or twice myself.

My ex-wife liked the flavor, but complained that it looked like she was eating a giant raw oyster.

She was not a fan of the presentation.

We make about the same thing but pound the chicken flat and roll it up.  I t looks like a large pin wheel.  We ave put all kinds of things inside but I think my favorite is pepperoni, cheese and pizza sauce.

What kind of sun dried tomatoes?  Oil soaked or reconstituted dry?

I used oil soaked, but I'm sure either would be fine.
