How much flour do I get out of a cup of wheat?  I hit google and came up with 10 cups of wheat to 14 cups of flour and the exact opposite.  Which is right?

How long is fresh ground wheat good for if stored airtight?  I'm planning to grind up a #10 can of hard white wheat to use over the next couple of weeks.

I ground a wide-mouth quart mason jar full and got about 4.5 cups of flour.

1 cup wheat = 1 1/2 cup flour after milling.

Freshly milled flour will start loosing it nutrients due to oxidation immedately but if you must you can store it in the freezer for 2 or 3 days.

The wheat will store for a long, long, long time, even after you open your #10 can, as long as you keep it dry and keep anything from eating it.  If you can just mill what you need when you need it.
