if you get the correct hose/attachments you can run propane lanterns, cook tops/burners, generators (if you genny is set up for propane), heaters etc.

Ones still used for propane can run a variety of heaters.  You can get
a tri-fuel generator (the Honda EU2000i has a kit to do this I am told)
and run it.

Decertified (can't fill them anymore) ones can be used as air pressure tanks.
Up to a hundred, hundred fifty PSI and you're GTG (I have a whole bunch of them
converted to this use for my air system to run my rock drills).

ETA:

It's easy.  Just use a pipe wrench or large crescent wrench to take the
valve off.  The fitting is a standard 3/4" npt.  I put ball valves on mine since
I use universal air couplers (like jackhammers use), but if you were using
a female air-tool style coupler you wouldn't need one (nice to have anyway).
If you use air-tool style couplers you might want  to build some gender
changers (male to male is the most often needed).  Lowes or Home
Depot has all the stuff you need.  There are kits out there
that have everything you need to convert a propane tank into an
air tank just like the air tanks you can buy at wallyworld.
Make sure to use thread sealing tape.

You can make sawdust heaters out of them.
