I kind of screwed up and didn't leave enough head space. Out of seven jars, three failed to seal. No biggie as this was just a test. This canner is HUGE. Next time, I'll buy a bunch more beef and make a project out of it. So far, we've used the meat to make some great soup and a pot of chilli (w/beans damn it!) I still have a couple of jars left that have been sitting in the pantry for a few weeks. So far, they look just fine Thanks to ODT for the idea Brownell's makes a headspace guage for those. |
