I have a Colt Combat Commander that was my fathers. Here it is in a dinner pic. I have never done anything to it and I was thinking its time for a little upgrade for it. It definitely needs a new ejector. It could possibly use a new barrel. I was thinking about a new trigger, maybe some new grip screws. They hex head ones. Maybe a different hammer. Maybe a new safety etc. How hard are 1911's to work on. I know the trigger and hammer will probably will be the hardest thing to change out on it.

I doubt it needs a new barrel, fitting a new bushing would take probably be a better route.

As far as hammer /sear, cylinder and slide, trigger won't be that hard. I personally wouldn't dick it up to much, plenty of those already out there.

I really want to replace some of my stainless parts with polished. (slide catch, hammer, safety, trigger) Anyone know a source for polished parts.

Do you mean polished blue or polished stainless?

Just my opinion but I wouldn't change anything that wasn't mechanically necessary.

Looking for a few polished stainless parts. Slide catch and safety mainly. Maybe hammer and trigger also to polished stainless. Can anyone send me in the right direction. I can't seem to find anyone offering those parts in the polished stainless.

What would a new bushing do for the pistol. I know it needs a new shell ejector. It doesn't throw brass anymore. The brass basically just falls out straight down.

the brass "falling straight down" suggests it may need a new EXTRACTOR,not ejector. This is a pretty easy part to replace. Approach the 1911 as a gun where EVERY part will require fitting. you may get lucky sometimes but never bet on it. I agree with the other poster that said unless mechanically required don't replace things that are working

Why would it need a barrel then? What is wrong with the barrel in it now?

No offense intended but it sounds like you are real new to this. I would highly recommend you do nothing to the pistol yourself and take it to a gunsmith. I would also agree that you shouldn't change anything. You really will regret it later if you do I think.
