Is AGI a good place to start learning to be a gunsmith?

Not unless you want to do hobby gunsmithing for yourself.
Internet or correspondence courses will not prepare you to be a professional and no one will hire you with correspondence courses as a base.

If you want to be a professional gunsmith, the best way is to attend a real gunsmithing school like Colorado School of Trades or Trinidad State Junior College.

Here's a list of the real schools that turn out qualified people:

Any thing else and you're just kidding yourself.
