Looks freaking delicious.

My wife makes a similar meal in a crock pot with the pork left for 5-6 hours in a crock pot that has had green chilis poured over it. Hard not to like it.

Some people put potatoes in green chili.  Whether or not you should is similar to the beans argument for red chili.  The people that put potatoes in green chili are wrong.  The people that put beans in red chili are not.

I've started cooking the pork on the barbecue pit with hickory chunks until it's about half way done instead of browning it,then simmer it in the green Chile sauce. It's a little more work but it's pretty magical.

Didn't peel.

Roast the chiles until the skins are somewhat charred.  Let them cool a little while (some put them in paper bags), shake 'em up, then peel the outer skins off.  They are inedible.

Needs way more chiles while you're at it.

Find some long green chile while you're at it.  Best long green chile in the world comes from Hatch down the Rio Grande to Las Cruces / Mesilla, and southwest into Ascencion in Mexico.
Potatoes are acceptable, so long as you've got lots of chile.  Beans are not.  Poblanos are acceptable, as are tomatillos, for the flavor.  Jalapenos, or if you're feeling adventurous, jabaneros, for heat.
Makes an incredible crock-pot Chile Verde.

Hot Hatch green chilies are the most common green chilies used.
