I'd like to learn to be a better driver and never end up in a video like that Mustang turd.     Any schools to avoid or ones that have a good reputation / you personally have taken and would recommend ?

Unnecessary. As an Arfcommer, you are blessed with an innate ability to be a really good driver and handle 2500hp to the rear wheels.

Autocross is a great way to learn car control btw. It is also extremely fun and cheap.

Run what you brung' too, as long as it can be classed. Just need a legal helmet, license and a well kept automobile.

I'm kind of excited that my agency (MSP) just opened up a bunch of civilian slots for the Winter Driving course that's usually only for troopers.
Tuesday I'll get to run one of the Chargers around this:

If you are near St. Louis, join the SCCA.  Take the Solo classes  and smoke your tires.  Then go to the Tuesday night (?) Performance Driving Experience (PDX).  They will give you an instructor and you  can drive around Gateway racetrack as fast as you want.

If that's all you seek, class is in session.

1.  Don't buy ford.
1A.  Especially don't buy a mustang.
2.  Think of the throttle is a infinite, not momentary switch.
3.  If you feel the tires breaking loose, reduce the power level via the aforementioned switch.  
4.  Countersteering.
5.  Don't buy ford.

Both, track days would definitely be in the mix, but being an all around better driver behind the wheel of a fast car is the main goal.

In New Hampshire, they have Team O'Neil Rally School for learning off-road car handling skills. They realistically mostly train government, military, and law enforcement, but all the classes are open to civilians as well. You'd have to take a multiday (3+ days) course to really get enough out of it, though.

Find your local Porsche racing club.  They usually know the reputable instructors and schools, and can/will steer you away from bad ones.  The Seattle club has an awesome school and instructors who will take you to the limits of the car.

Buy an old 2000s Mustang, gut the interior, get a seat and a helmet, join local SCCA...

Maybe get some racing suspension and brakes at some point.

Do it.  This kind of thing seems expensive on the surface (not that you've mentioned cost as a factor, but just from my own experience) and it is a commitment.  It's certainly much easier just to throw parts/money at a car and not worry about the driver, but that's the wrong approach.  "Driver mod" is where it's at.  Consider it an investment and enjoy the ride - you will not regret it (well, in the end your wallet might, but you won't ).
