Any tips for 0 carb egg salad? The one I just made is flat and one dimensional. I'm guessing sugar is what makes it better. I did add a kosher pickle, even though that has carbs. Thanks |

Old school it. Mix together: Several-Chopped hard boiled eggs. Big spoonful-Mayo (helmans or dukes). Squirt of-Yellow or brown mustard. Big spoonful-Sweet rellish. Little or a lot to taste-Diced onion. Little-Diced red bell pepper. Pinch-Salt & black pepper to taste. Sprinkle-smoked sweet paprika to taste. Need a kick sprinkle-Cayenne or red pepper flakes. Have it with saltine, club or ritz crackers or, Sandwich on toasted white, wheat, rye, yeast or hawian roll, if this need couple slices of tomato. Need some fries or chips of choice on the side. |

Americans have such a huge sweet tooth that they want to always satisfy that even foods you might not expect to have sugar in it someone is going to put in sugar to satisfy their sweet tooth. |

A lot of store bought tato salad or macaroni salad contains extra sugar. Its because it makes it more widely palatable to more people who are often so saturated with sugar that if it isn't sweet there seems like there is something wrong with it. Sugar also helps keep it palatable longer, which isn't necessary if its home made and not expected to last more than a day or two before being eaten. Home made probably should have little to no sugar; it covers the other flavors. |

The only hyphenated names I like are cartridge names......30-06, 30-40, 38-55 etc.

| One that ive found is that if you replace 1/3 of the hard boiled eggs with pickled eggs, it can surprisingly popular. More than that though and the vinegar flavor can be overwhelming. |

I substitute dijon or horseradish mustard for yellow mustard in egg salad and deviled eggs. |
