Long tongs, metal spatula, instant-read thermometer, silicone basting brush, grill brush. Should be all you need. Oh, and a chimney starter if you have a charcoal grill. I have this grill brush. Bought it after a recommendation from America's Test Kitchen. It does a great job, and the steel pad is easily washed in the dishwasher and easily replaced when worn out. I have seen a lot of grillers buy pastry brushes to use on the grill and then wonder why they have a hard time getting them clean. Just because it's a brush doesn't mean it's the right one for the job. |

I don't even use grates, when I'm cooking a steak (straight on the coals). Anyway, I do all of my grilling with: Lump charcoal Chimney starter Newspaper Zippo Brush Paper Towels and Crisco (for the cast iron grates) Tongs Wireless probe thermometer, if smoking or slow cooking I've never needed anything else.
