Ok  for starters I'm re doing my daughters BR since her decorating skills made it virtually impossible to paint over. Im in an older construction 2 story house (1960's) and have it down to the studs. It's a 2nd floor BR and have 3 different types (years) of insulation. I think the oldest is GOLD BOND ROCK WOOL, and 2 different thicknesses of OWENS CORNING fiberglass ,which I assume is fiberglass. My question is do I need to worry about this rock wool stuff?

Without seeing it, if you have doubts, get some masks and tear it out and install new. Since you have the walls torn out, just a little more work will be piece of mind.

I would wear a 3M- 8511 or similar. A n-95 with exhalation valve. I would try to seal off any wire holes, pipe holes,etc. caulk or foam anywhere you can. If you can afford it go back with spray foam.
