The Sauce

*1 Large can of Tomato juice, and two "small ones", unsalted, if you can get it.
*6 Quarts of apple cider vinegar.
*1 Lb. salt.
*1/2 Lb. black pepper.
*2 Tsp. cayenne pepper.
*4 Tbsp. ground clove.
*8 Tsp. ground allspice.
*4 Lb. brown sugar

I believe the directions were to put it in the slow cooker and reduce it by half or more.  And preferably outside as the evaporating vinegar can be unpleasant

Small batch quantities I copied at some point but haven't tried it.


1 and 1/3 cups unsalted tomato juice

6 cups ACV

7 TBSP salt

9 TBSP black pepper

1/2 TSP cayenne

1 TBSP ground clove

2 TSP ground allspice

2 1/2 cups brown sugar

I just made the smaller recipe.  Made 3.5 small glass jars (I think 16 ounce jars?).

I shorted the salt and pepper but added the rest halfway through because it seemed like it would be okay.  The end result is pretty potent. Pungent. Definitely not a sweet sauce like store bought bbq sauce.

I cooked it inside in a slow cooker.  I had to open the windows at night but it only made my eyes water and burn a little.

I'm going to gift a couple bottles and sit on one. I'll use the half soon on some chicken or something.

I've never heard of this "sauce" but from the ingredients I'm seeing its basically the same as every Eastern NC BBQ sauce recipe I've ever seen or fixed.

Seriously, look up some ENC BBQ sauce recipes. Most don't have the tomato sauce, a few do.

I'll probably put a pot on this week while the wife is at work. I made a half batch last year and I'm down to a quart or two left. I'm making a full batch so that I can get a little more age in this one. It really does get better with some age on it.

I thought it tasted more like an amped up A1 sauce than BBQ sauce. It was okay, I should have made it outside though.

No, not at all.
I use it similar to Worcestershire sauce, but larger quantity. Mostly as a marinade for chicken. I add a few tablespoons to my hamburger mixture and same for meatloaf.

a bit thin on the left, a bit thick on the right.  the best is about a 1/2 reduction.  16 hours in the crock pot on high, OUTSIDE
