The other week I made the mistake of watching Alton Brown's Good Eat's show on Man Food. Ever since then I've been addicted to his method of making burgers/sliders/gut bombs. I've tweaked it a little bit and came up with a burger that is definately full of win. First start with about 1.25 lbs of ground beef. Put a piece of wax paper on the bottom of a sheet pan, spread the beef out, cover with platic wrap and roll the beef thin and flat.





Next season the ground beef to your liking. I used salt, pepper, garlic powder, onion powder, and a little beef bouillon in granual form.





That is normally how I have been preparing the ground beef and it is excellent. However, this time I decided to try something new and added bacon!





Next fold the ground beef sheet in half and roll together.





Now cut the beef into patties. Alton Brown cuts his into 8, I just cut mine into 6.





Next put them on a hot griddle set at 350 degrees.





Flip the burgers after about 2 minutes and cook for another minute or two. Because they are so thin they cook quick!





I like cheese so I add that and toast the buns at the same time.





Burger assembled on the plate. Sometimes I'll add cooked onions but I didn't bother with them this time.





For the final result I cut the burger in half to show all the goodness inside. From the bottom up you have a toasted bun, a nicely browned thin piece of beef, bacon, another nicely browned thin piece of beef, cheese, ketchup, and topped with a toasted bun. There is so much flavor burster out of the burger I can't describe it and do it justice.





This isn't the only way to make a good burger but it is definately one of the ways to make a really good burger really fast. So what do you think?

LOL, I was moving sluggish because I had just finished off 4 of the burgers without bacon before I decided to cook those.  If anyone in Kentucky is hungry I still have 5 of the bacon burgers left.



Anyway it doesn't matter if the seasoning is perfect because you folder it and roll it together.  It all evens out.



Anyone that wants to make it I will give you this tip.  Alton Brown used a wine bottle to roll out the beef in the sheet pan.  I thought that was kind of girly so I tried to use a rolling pin.  The problem is the sides of the sheet pan are too tall and the rolling pin can't get all the way down in the pan to get the beef thin enough.  I ended up using a wine bottle and it works great.

I gotta recommendation...kill the catsup.  Instead, mix a little mayo and chipotle powder together to where it just turns orange.  Lettuce, tomatos, red onion, and some good dills.   Nothing ruins a good burger like a crap bun.  Find some nice sourdough rolls, or even go buy hamburger buns from Fuddruckers.

I saw one show on the food channel where they boiled their bacon,  made thin patties out of it, fried it,and added bacon pattie to their burgers.
I havent tried it yet..

The design really isn't to make a good burger, more of an enhanced slider which is supposed to be kept simple.  The mayo and chipotle sound really good though.  I've tried making them thicker but they don't turn out as well.  They take longer to cook which results in them shrinking a lot more and drying out.

1: Ground chuck.



2: Cast iron skillet, very, very hot.



3: Salt only. Anything else just burns. Add the other stuff after cooking.



4: 3-5 minutes per side, turning only once.



5: Enjoy!



Oh, and don't buy your meat from Walmart. It is supplied by Tyson, is usually old, and is packed in carbon monoxide to make it look fresh. Anytime you see a pack of ground meat where the plastic is not wrapped tightly, touching the meat, it means it is packed in carbon monoxide. It can be just short of rotten and you can't tell until you open it.

Ketchup was a total failure there. Otherwise, looks good. Needs lettuce, onion, and tomato though. BBQ sauce would have made that thing spectacular.

Ketchup and or Ranch are my preferred condiments.  In my bacon and cheese in the middle trial I will make burgers using a bunch of different condiments and toppings.  I still have a package of bacon and one and half pounds of ground beef left.  If time allows I will attempt that tonight and post new pictures.

Looks good. I prefer to grind up raw bacon and add it directly to the ground meat (chop it finely if you don't have a meat grinder). Roughly 25% bacon 75% ground beef.

I chop up bacon into ~ .25"-.5" squares and add it to my ground beef prior to pattying the burgers.


It is excellent and in fact it is the only way I make my burgers now.


The bacon fat also acts as a binder when you decide to go with a lean beef (like a 93/7).
