I'm in the market for a new set. I have $250-300 to spend. I have looked at Cold Steel and Wusthof.

What do you guys have in the block?

Look at Cutco.



We've had them for about seven years and they are mt favorite knives. Keep their edge, well made, durable. Made in America too.



I've had Chicago Cutlery, Wusthof Solingens, etc... but will stick with these now. We use them daily BTW, they don't sit in the block long.

I have a few Cutco steak blades and they do hold up well. Thanks for reminding me about them. I would love to keep the $ here also.

I have a cold steel set that I bought off Amazon.  I have been very pleased with them.  They have held an edge and the handles are comfortable and have held up to the frequent washing.

We have Messermeister Meridian Elites.

Wusthofs are also good.

Make sure whatever you get does NOT have scintered handles welded to a forged blade (most if not all Henckels). The weld eventually breaks.

Look for one piece forged handle and blade.

Shun knives.  They'll even re-sharpen them for you once a year for free

I have Victorinox. Very good steel. Takes and holds an edge and easily resharpens.
I Would also recommend a smith brand 12" diamond coated sharpening "steel".
You cant go wrong with any brand mentioned. Its all in what fits your hand and suits you.

We have the Kershaw/Shun Wasabi knives.  They are very sharp and I believe they carry the same sharpening/warranty as Shun knives.

While cost should never be the measurement of quality, quality does not come cheaply.

Another vote for Shun. I've got 6 of the Ken Onions currently. I bought 2 by themselves and then got a sweet deal on 4 more from Woot. They aren't cheap, but they are awesome. I just sent two of them in for sharpening. Cost me 5 bucks for shiipping. I had them back within two weeks razor sharp. I use the hell out of them and once a year sharpening is plenty.

The Victornox's are consistantly rated as a "best buy" by Cooks Illustrated and other testers. You get a good quality blade at a very reasonable price. While I've got a hodgepodge of blades from various makers on the knife bar I am grabbing the ceramic blades more and more these days for paring and slicing work.
