I have a Stealth Deceptor, hadn’t gotten a picture in about a week. Well the antenna was broken off and laying on the ground. So I ordered a 2 pack for $8 and it’s transmitting again. But that got me thinking since it’s never really had great cell service where it’s located - has anyone ever hooked up a larger antenna up on a pole? Built their own? I’m thinking about a Yagi that says it covers the entire 4g frequency range for ATT and Verizon.

If you know for sure where to point an antenna, you could use a directional antenna. Do not buy the one you linked to, that is a narrow band yagi and will not necessarily work correctly on whatever frequency band you need it to work on.

Get a broadband antenna like this:
Amazon Product
 • 【High Gain】The directional yagi-style antenna features 8dB-9dB gain, work with all 50 Ohm cellular amplifier systems, compatible with all US carriers, and it supports multiple devices so you could enhance your 3G/4G/5G LTE signals.

Or you could get an omnidirectional like this and not worry about where it's pointed:
Amazon Product
 • [Antenna Gain]Frequency Range: 698 - 4000MHz; Gain：10-12dBi; Highly enhance your 3G/4G/LTE/5G signal range, improve your mobile broadband reception.

Your device looks to have a Reverse polarity SMA connector, you'll probably have to get an appropriate connector or adapter to get another antenna connected to it.

If it is an RP-SMA and you try to connect a standard SMA to it, you'll damage one or both connectors.

4 years ago when my son got married in the middle of covid we could only have 10 people at the wedding. His bride had picked this beautiful old plantation house out in the country. With no internet access and weak cell service.

I bought a portable 5g Hotspot that could take external antenna connections, two antennas like the first one in your picture, made a 20' tower, pointed the antennas at the closest cell tower (forget what app I used to find it) got a great signal and streamed his wedding on YouTube and Facebook to a couple hundred relatives.
