Probably something better today, but I found some new, old stock, Calphalon egg pan way back in my cabinet.  It works well .

If it’s teflon (it looks like it is) then it should be trash canned the instant it develops scratches or the coating changes color.

No need to over think it.

Was my understanding

It’s toxic at this point?       I was going to move to steel, but I wanted to ask

I use a seasoned De Buyer carbon steel crepe pan. It is a little domed but it isn't an issue for me. Seasoned cast iron works too but is a lot heavier and not nearly as smooth unless you get a really high dollar one or put a lot of work into it.

Too many questionable tests for the misen.   It clearly has a coat on it from the tests

Carbon steel.

Brand doesn't matter.  Just make sure it's not one of the coated ones that say they're not coated...fuck those guys.  Looks like you've already figured that out.

Pick one you like the look of most.  Welded vs riveted handle.  Some are more fancy, some are more utilitarian.  I have whatever cheapest one I could find on Amazon and it's been fantastic for probably 8 years now and I use it daily...I'm pretty sure it's a Matfer 11".  It's my workhorse...my main pan for everything from making sausage gravy, eggs, searing steaks, making gravy, chicken, venison, vegetables, everything.

Cast iron works too obviously.  Carbon steel is lighter, changes heat faster, cheaper for new high quality pieces (Ok...it used to be cheaper...).  Only thing cast iron is better for is searing because cast iron will hold heat better than carbon steel.  It's minor though.

So I checked my order....HO LEE FUK these have got expensive since I bought mine.  2018, this pan was $35.  It's now $105

Alegacy Eagleware heavy duty aluminum

Those are the ones every egg place in the U.S. uses them.

As a teenager I flipped many an egg and omelettes in those pans.

I went through a couple non-stick egg pans the same way  once the coating’s damaged, it is basically done. I switched to a small aluminum pan instead and have not looked back. With a little oil or butter, eggs release just fine and there is nothing to flake off over time. This is the style I use https://www.allpointsfps.com/78855-8-in-aluminum-fry-pan-winco/ Not fancy, but simple and durable, which is why I prefer it now

Matfer

These pans are really nice. They require little seasoning and hold it well.

No way I would cook in that plastic lined pan. There is a direct link between micro plastic consumption and reduced testosterone in men.

Cast iron and a little butter. You’re gonna get perfect eggs.

I would have pitched that long ago.  I prefer cast iron or clad stainless.

That's the way with the exception use bacon grease in place of the butter.

Toss that thing now.

I have a small 8" calphalon non-stick for eggs.  I prefer it to cast iron (for eggs) b/c it heats up faster and doesn't get any easier to clean.

Love cast iron but if you eat enough eggs, particularly omelets, a dedicated pan is the way.

Learn to cook in it, they are easy to clean up.  Oil hot, coat the entire pan, butter, egg and let it cook, it will slide around the pan.  I can do this in cast iron and stainless steel.  You are cooking to dry if the egg sticks and you learned that cooking in plastic pans.
