I have an abundance of zucchini. I’ve been adding it to every recipe I can, but I’m running out of ideas. Cooking zucchini bread and Italian chicken today.Italian chicken and zucchini

Slice & pan fry with onions, just before done sprinkle with a bit of teriyaki & soy sauce.

I usually fry in a mix of butter and sesame oil

Slice the zucchini in half the long way.  Fry skin side up till they brown a little.  Then flip over skin side down.  When a knife goes through with a little resistance, they're done.  Put then aside.

Mince some onion and a few cloves of garlic.  Saute the onion till soft, then add the garlic.

Slice the zucchini into about 1/2 inch slices, add to pan, mix with onions and garlic.  Add some dried basil and oregano, a little salt and pepper.

You can stop there or add some tomato puree and let it simmer for a few minites.

-or-

Slice the zucchini in half as above, cook it on the charcoal grill.

I fold up a pan from aluminum foil and cook some sliced onions in a little olive oil.  Add some minced garlic when the onions are done - don't burn the garlic.

Slice the cooked zucchini and mix with the onions and garlic.

-or-

Especially with large zucchini, slice in half, scoop out the inside.

Saute the pulp with some salt, pepper, and a little onion.

Take the skin off some eye-talian sausage, cook it and crumble it up.

Combine the sauteed pulp and sausage, put it in the zucchini shell, add some tomato sauce if you want, put some mozzerela on it and bake till done.

There’s only 1 recipe needed: zucchini patties!

I will literally eat 10 of these in a sitting. I will eat less steak and potatoes to eat more zucchini patties.

2 1/2 c. (1 lb.) grated fresh zucchini
1 egg, lightly beaten
1 1/2 T. minced onion
1/2 tsp. salt
freshly ground pepper
1 T. minced fresh parsley
2 T. Parmesan
1 c. soft bread crumbs
Fine dry bread crumbs
Vegetable oil
Combine egg, onion, seasonings, and cheese and mix well. Stir in soft bread crumbs. Stir in grated zucchini. Spoon a rounded tablespoon at a time into the fine dry bread crumbs, spooning crumbs over the mixture. Place in a skillet with hot vegetable oil and flatten with a spatula to form patties. Brown both sides over medium heat, turning carefully.

After you try them, you’ll slap your mother and then PM me for my information to be added to your inheritance. That’s how much you’ll love me.

Cut 1/8 slices, bread them and air fry them.   Usual pat dry, flour then egg wash then bread crumbs, that you already seasoned.

Sounds weird but zucchini makes a good pasta-like substitute if you use the veggetti.

They make great compost.  

Roasted in an air fryer is my go to for excess.  

At the end of the day, you can only eat so much zucchini.

Pan fried with peppers and onions.

I have 3 vines and I went vertical this year. They have slowed down but were each producing one or more large fruit a day. I’ve never had so much to deal with

I do a breakfast scramble with zucchini in it; use large 12 inch skillet
2 medium potatoes - you can grate them similar to making hash browns, I usually dice them or slice them like fried potatos
I/2 pound of breakfast sausage, after the potato slices/dices are browned on one/two sides I stir them up, then push them to 1/2  the skillet and add sausage and flatten with flipper. Brown on one side, then flip sausage over and add veggies.
1/2 onion, slices or spears, 1 bell pepper roughly diced, sliced mushrooms and a sliced zucchini get added then a lid put on the skillet to steam the veggies until soft.
Break up the sausage and make sure potatoes and veggies are cooked.
6 beaten eggs added, stir and flip to get the eggs cooked.
Serve in a bowl, as it contains fried potatoes in my house that always meant some ketchup over the top

Julienne the zucchini with a Julienne Peeler

Stir fry with butter, season with what ever you like.

I like Thomas Keller’s preparation:

Slice in half then crosshatch
Place on towel for a few minutes
Brown flesh side in hot cast iron.
Flip over and bake in hot oven.

I like to add things like balsamic glaze, crumbled bacon, feta cheese, etc. when Input it into the oven.

Equal parts zucchini, ripe red tomatoes and sweet onions in a casserole dish.  Salt and pepper generously, top with LOTS of parmesan cheese.  Bake in oven at 350 for about 40 minutes or until all are soft...enjoy.

My favorite is pretty simple.  Chopped up onions - not too fine, garlic - sautéed in olive oil, then add a bunch or peeled and diced up tomatoes- you can leave the skin on if you want, but take what seeds out that you can and drain off the liquid inside decently too - helps it cook down quicker, and then several zucchini sliced about 1/2” or a bit more thick.   Also add oregano and basil.  It’s done when the zucchini are softened up
Cook in a large frying pan or sauté pan

I like it with some pasta like rotini or bow ties.  
You could put some chopped up cabbage in if you want, eggplant, corn, peppers.  

My Dad used to make a soup, very similar ingredients list, whatever there was in quantity from the garden.    That was so good too.  
Right now I’ve got such coming but no ripe tomatoes.  The dog picked one that might have turned red by now.  I cannot bring him in the garden- he will either knock everything down or eat it all.  

I could eat that stuff almost every day in the summer

Grilled zucchini (olive oil, salt, pepper, garlic powder) is simple and delicious. Makes a great summer side for something cooked on the grill.
