Thighs were on sale $1.49/LB so I couldn’t resist.

Load the vortex up with a chimney full of lit coals, set the temp to 400F and let it preheat.

Bust out the chicken and pat dry. Brush on some olive oil and sprinkle seasoning mix on both sides - mix was simple; Lawry’s salt, coarse black pepper, garlic & onion powders, MSG and some corn starch (for crispiness).

When the grill hits 400F arrange thighs around the vortex cone and put a piece of cherry smoking wood over the center.

Close lid and wait. Rotate lid 90° every 10 minutes for even smoke distribution. They’re done when the biggest one hits 175F or usually about 45-60min.

FB marketplace. All the way. Super clean ones all over it.  Mine is the $299 22” master touch but I got a 1yr old one for $99 on FB MP with a cover, too.

I recommend the 26” Kettle if you can find it and like to do bigger cooks and longer smokes.

But whether you get the 22” or 26”, get the SnS stainless grate and Slow’n’Sear.  And  Spidergrills Venom WiFi controller doesn’t require modification if you want temp control.
