What recipes do y'all use?  I have been playing around with the cowboy Kent recipe.  Today I used a pound of ground beef, 1 lb of HEB hickory breakfast sausage, a few strips of bacon, one can of Campbell's golden mushroom, and one can of HEB poblano soup.  I also diced up a large yellow onion, one bell pepper, fresh green beans, two jalapenos, and one serrano pepper.  I also threw in some liquid smoke and some war pig and beef seasoning, I cannot remember the name of it. I also use some double pepper HEB cheese, and some sharp cheddar. It turned out pretty darn tasty. It is way better than the standard version. What does everybody else do with it?Attached File

Looks good.  Moar jealous that you have access to HEB.

I haven't even thought of making tater casserole in a VERY long time.  Now I've gotta try it again.

Looks great, OP! What temp and time? I might make this today. I took out a lb of Owen's sausage last night to make SOS for breakfast with bisquits but realized this morning that I didn;t have enough milk.

My wife makes a roux with milk and the burger fat. No canned soup.
With the separately sauteed onions and seasoned salt, it kicks the dish up a couple notches.
She uses the extra crispy tots now too.

I believe it was 350° for 35-45 minutes.  I basically used cowboy Kent Rollins recipe, but I modified it to fit what I had in the pantry. The golden mushroom soup is a huge improvement over the normal cream of mushroom.
