Did one up today for the first time, came out alright tasty and juicy but still a bit tough.     Rinsed well and seasoned it up with recommended stuff from YT, some garlic, crushed pepper corns, some coriander and onion powder, little brown sugar.  

  Trager set at 270 was on the grill for maybe 4 hours, hit a temp of 165 to 170.  Then placed in a aluminum pan, with water and low sodium beef bullion then covered then put it to a 325 oven for another 1.5 hours internal temp at 210.  Let rest and sliced.     Only used the oven to save pellets as it was all covered.

     Was expecting it to be more tender, any thoughts on that just maybe the meat not sure or I should have went longer at a lower temp or higher temp in the oven but didn't want it dried out?

   Whipped up a Rueben with the corn, wife liked it anyway.

Smoked corned beef is pastrami.
Let it cool, slice it thin, steam it up to temp and it'll be better

You need to steam it to make pastrami. Will make it more tender. I love pastrami but it takes a couple of days to make.

I kno I'm late to the party on this thread but

You got too much heat.
Low and slow is smoking

I use an electric masterbilt and set my temp at 200
Give it time
Let it come up slow
Be patient
It's an all day affair
It only needs 150 to be cooked

After being pickled nothing is gonna live in it anyways
