Something that has been on my bucket list for a while: Here we have a batch of Shagbark Hickory bark from trees on a farm that has been in the family since 1904, gathered on the winter solstice for good measure, that we've processed and cooked down for Hickory Syrup. The final products yields a deliciously sweet, smoky, nutty flavored syrup. The Wine Cellar connection? Being basically a “simple syrup” at heart, the Hickory Syrup makes an interesting sweetener for your bourbon Old Fashioned.

This is EXTREMELY interesting to me. How do you describe the flavor? (I know that's not an easy question to answer.) I love hickory nuts (they're my favorite, alongside black walnuts). I have 14 walnut trees but no hickory on our tiny bit of land. I've tried. I tried with some nuts I believed came from the legacy tree that was my friend (yes, trees are my friends--I know weird Kitties is weird) growing up. I would sit with my back to her and tell her my troubles. She listened and I always felt better. I have stories about how she fed me as I sat under her with my dad when he cracked nuts for both of us when I was a little girl. Anyway... I never got any of those Shagbark nuts to start here. Not sure why. (I'm supposed to know how to grow things, but I did not focus on this with a lot of intention. ) So this syrup of yours is of special interest to me. Maybe even as medicine and not just as flavoring.
