Ancient walnut liqueur...picked these walnuts on the summer solstice, they have been steeping for 6 weeks, now the liqueur is strained off and will age till Christmas. The small jar batch was made with a "local product"

We'll see what happens.

I've made several batches before.  It is pretty astringent without adding simple syrup to backsweeten it and finish the product. I add cinnamon, cloves, vanilla bean, and nutmeg.  I add enough simple syrup to make it a very sweet aperitif served over ice.   Careful not to get any of it on anything. It stains really badly.

Per the tradition I strained the aged liquor on Christmas Day. With only the pure maple syrup I'd originally used as the sweetener we found it somewhat bitter so we added a bit of simple syrup to make it more agreeable. My wife says it has a “floral” taste.
