I've been trying to get it right for decades it seems. But mine fall short every time. The local guy I liked went out of business years ago. I've tried the frozen asian store ones but they don't taste good to me. Fried crispy spring roll skins, rolled small with ground pork and possibly chopped shrimp (mixed) with a cellophane noodle/shredded carrot rebar binder. S&P, garlic and chives for sure. Other spices? |

I live in Florida so I'm nearly in the Navy as it is. Besides, they'd kick me to the curb whilst laughing in my face if I showed up at the recruiters office. Easier to roll my own and a lot less embarrassing in the long run. ETA: A google for Phillipino shows a food truck 15min away. Hotdang! Jimmies are rustling! |

Much easier if you have a few people to help roll. I love these things. I grind ~ half and half ground pork/shrimp. it's ok to go 3:2 heavy on the pork, I've never added more shrimp than pork. Season with a little soy, add a little shredded carrots and ginger (i'm more adding this for that hint of sweetness, try to to overdo it) and a good bit of garlic. There's really not much to it. Optional: You can add a little onion and celery, but I think it's fine without Make sure to use the smooth spring roll wrappers. Attached File Fry at ~350-375 for 3 or 4 minutes. Soy, rice wine vinegar, sugar and a few drops of sesame oil. Dip #1. Feeling fancy days gets some fish or oyster sauce added. Sweet chili sauce. Dip #2. I'll eat too many of them if I'm not careful. Yum! It's probably best I can't get ahold of any, now that I ponder it some. |

I meant this part as being the dip, but now that I think of it, i probably throw a big spoon of chili paste into the lumpia mix too. But still, optional. I invariably have a dip that has some chili paste in it. |
