It may be a little different than brewing beer but we are making quite a bit more hard cider this year. Got a new hydraulic press to replace the one my grandfather built about 65 years ago. It has pressed thousands of gallons of cider. Attached File This one will still be used. I'm giving it to my brother. we have about 25 bushel of apples and will have over 75 gallons of cider. Some will be used fresh, some frozen, some for vinegar and some fermented for hard cider. We have 5 gallons started now and will be starting another 7 this week. Using several different yeasts and cider spices. Attached File |

| As I read this I am sipping some cider I made myself. I don't have access to mass quantities of apples or a press so I use pasturized apple juice/apple juice blends from the supermarket. For yeast I use SafCider AC and go from start to bottling in a little over a week. |

Haven't made cider in ages, but, when we did, it was with champagne yeast. Turned out at 8.5% alcohol and nice and dry.
