It almost didn't fit... 16.3 lbs of grain and 7.75 gal of water in a 10-gallon pot, it was close but it all fit!  Attached File |

Got a good hot break without making a mess and then a good boil. It's in the fermenter and the temp chamber now coming down from 64 degrees (after the counterflow chiller) to 52 degrees for the pitch. My hydrometer OG is 1.081, I use a Tilt Hydrometer for monitoring my fermentation and it is reporting 1.080 so I'm OK with that difference. I made a 2L two-stage yeast starter and will pitch before I go to bed. Attached File |

Finished ferm, diacetyl rest, then 1 month of lagering, and another week of cold crash and gelatin fining. Kegged it and carbonated at serving pressure for another week. Came out at 8.25% ABV, clear and smooth and tasty. Attached File |
